Breakfast is the most important meal; this is true for a family that has to fuel in the morning before a day of manual work on the farm. You have found an easy-to-make, yet exquisite casserole dish recipe.

What is an Amish Breakfast Casserole?

I love breakfast in casseroles because it makes my work very easy! We live in a farmhouse located on a very big farm. Our hens are the best, giving us eggs all year round but taking a break during the coldest of winters.

Though we supply eggs to many groceries in the area, we usually have a lot of eggs left. We feed them on garden waste and chicken feed made on the farm. Our organic eggs are nutritious and taste good as well.

With lots of eggs on the farm, I love finding creative ways of using the eggs. Casserole dishes call for lots of eggs. Eggs are the major ingredient that binds the other ingredients together.

This casserole is made of various ingredients, making it rich in both flavor and nutrients. I also love it because we tend to use fewer dishes on the day we make the casserole dish!

Ingredients And Substitutions

Eggs

Eggs are the major ingredient in the casserole, they act as the binding agent holding all the other ingredients together. Eggs are an excellent source of protein making the dish nutritious.

Cheddar Cheese

Grated cheddar cheese enriches the dish with its tangy flavor, when baked, it melts attaching to the other ingredients.

Cottage Cheese

Cottage cheese has a mild flavor complementing perfectly with cheddar cheese. Cottage cheese is creamy in consistency making the dish creamy and moist. You can substitute cottage cheese with milk or sour cream.

Bacon

Oh my, who doesn't love bacon? The meaty and salty flavor just makes the breakfast casserole taste heavenly. I usually chop the bacon into small pieces so that every part of the casserole has the decadent taste of bacon. My littlest one is good at patiently picking out all the bacon from his slice of Amish Breakfast Casserole. You can substitute bacon with sausage.

Bell peppers ( green, yellow, and red)

These peppers add delicate flavors with beautiful colors to the dish as well. You can omit adding them to this dish if you do not have them at hand.

White onions

Onions possess a strong, distinct flavor that goes unnoticed in this dish. The onion flavor pairs beautifully with eggs and potatoes in the Amish Breakfast Casserole.

Salt

Salt seasons the casserole, without it the dish will be flat and boring.

Red pepper

I love pepper in my savory dishes, you can adjust the amount to levels you can tolerate. You can use black pepper or cayenne, depending on how much you can tolerate.

Fresh coriander

Fresh herbs elevate the deliciousness of the breakfast dish, adding a fresh vegetable flavor.

How to make Amish Breakfast Casserole

There are various ingredients that can be used to make a breakfast casserole dish. This recipe calls for eggs, grated potatoes, bacon or sausage, cheddar cheese, cottage cheese, and onions.

Fry the bacon on a hot skillet for 5 minutes till slightly golden brown in color. Chop onions and bell peppers into small-sized chunks and set aside. Preheat your oven to 300 F /180 C.  

Sauté the onions, and chopped green, red, and yellow peppers for about five minutes till the onions are transparent. Chop the bacon into small pieces.

Preheat the oven to 300F or 180 C

Add the bacon and onions into a large mixing bowl. Add the grated cheddar, cottage cheese, and frozen grated potatoes into the large mixing bowl. Mix with a rubber spatula till all ingredients are fully combined.

In another bowl beat the eggs till light, season with salt, paprika, and some pepper. Add half a cup of milk and give it a good stir.

Pour the egg and milk mixture into the large mixing bowl containing the mixed ingredients. Mix well till all the ingredients are fully incorporated. Grease your 9 by 13-inch glass baking dish.

Bake the dish in a preheated oven for 30 minutes until the top is beautifully golden brown in color.

You can cover it with foil and bake it for an additional 10 minutes. Pop the dish out of the oven and serve warm.

Place into oven at 300 fahrenheit

  • 9x13 inch glass or ceramic baking tin - these are great for baking the dish as they take time to lose heat, they will keep the meal warm slightly longer.

Top tip

Make sure that all your eggs are fresh

You will be using many eggs in this recipe. Break one egg into a separate bowl before adding to a big mixing bowl. This will help eliminate any bad eggs.

Making the dish the night before will let the flavors bloom. By morning, the flavor of each ingredient would have intensified greatly. Try making the dish at night and enjoy the exquisite breakfast dish.

Can I make the recipe ahead of time?

Yes, you can make it at night and warm it in the morning. It is possible to make it if you have a very early morning and you do not have time to wait for the casserole to bake. It's faster to warm it in the microwave in the morning. 

How can I store my leftover breakfast casserole?

To keep any leftovers, wrap the top of the casserole dish with plastic wrap. This traps all the moisture and flavor inside. Store it in the refrigerator for 3 days at most.

Ingredients
  

  • 1 pound sliced bacon
  • 1 medium sweet onion
  • 10 large Eggs
  • 4 cups Frozen shredded potato
  • 2 cups Shredded cheddar cheese
  • 1 teaspoon Salt
  • ½ teaspoon Cayenne Pepper
  • ½ cup Diced green pepper
  • 1 medium sized White onion
  • ½ cup Diced yellow bell pepper
  • ½ cup Diced red bell pepper

Instructions
 

  • Wash the vegetables and pat them dry with a paper napkin. Dice the bell peppers and onion into small pieces and keep them aside in bowls.
  • In a heavy-based saucepan fry the bacon with little oil till light golden brown. Set them aside to cool on a chopping board.
  • Meanwhile, saute the onions and diced bell peppers with little vegetable oil over medium heat until the onions become translucent in color.
    Use the same saucepan that you used to make the bacon. Dice the bacon into small pieces.
  • In a large mixing bowl, crack the eggs. Beat them lightly then add salt and sauteed onions and pepper, and mix well.
  • Add in the bacon, cheese, potatoes, and sauteed vegetables. Mix the eggs with the rest of the ingredients until thoroughly mixed.
  • Grease the 9 x 13 inches glass baking dish. Preheat the oven to 180 F or 350 C. Pour the mixture into the casserole dish.
  • Bake the Amish Casserole Breakfast for 30 minutes, then cover with foil and bake for an additional 10 minutes.
  • The top of the casserole will have an attractive brown color and crispy texture.
  • Serve warm with a sprinkle of finely chopped fresh coriander, chives, or parsley.
